Cover crops (or green manures) are plants grown specifically to benefit the soil, rather than for harvest. In organic gardening, they prevent soil erosion, suppress weeds, add organic matter when dug in or "chopped and dropped," and some (legumes like clover or vetch) fix atmospheric nitrogen into the soil, acting as a natural fertiliser. They are typically sown in autumn or spring during periods when beds would otherwise be bare.
